🛒 Ingredients
- 2 cups (about 300 g) maize flour / cornmeal
- 3½–4 cups (850–950 ml) water
- ½ teaspoon salt (optional)
👨🍳 How to Make It
1. Boil the water
Put about 3 cups of water into a heavy saucepan and bring it to a boil.
2. Make the starter
Lower the heat slightly. Slowly add about ½ cup of maize flour, stirring constantly with a wooden spoon until you have a smooth, thick porridge.
3. Add more flour
Gradually sprinkle in the remaining maize flour while stirring vigorously. Keep working the mixture to prevent lumps.
4. Cook and knead
Continue stirring and pressing the ugali against the sides of the pot for 10–15 minutes. Add small amounts of hot water if necessary.
The finished ugali should be smooth, firm, and able to hold its shape.
5. Steam briefly
Shape the ugali into a mound, cover the pot, and cook over very low heat for another 3–5 minutes.
6. Serve
Turn it onto a plate or serving board and shape it into a mound. Serve immediately.
