🛒 Ingredients
- 500 g salt cod (bacalhau), soaked and desalted
- 500 g potatoes
- 1 large onion, thinly sliced
- 4–5 eggs
- 2 cloves garlic, minced
- 3 tablespoons extra-virgin olive oil
- 1 bay leaf
- ½ cup black olives
- Fresh parsley, chopped
- Black pepper, to taste
- Salt, only if needed
👨🍳 How to Make It
1. Desalt the cod 🐟
Place the salt cod in cold water in the refrigerator for 24–48 hours, changing the water several times. The exact time depends on the thickness and saltiness of the cod.
Drain, remove the skin and bones, and flake the fish into small pieces.
2. Prepare the potatoes 🥔
Cut the potatoes into very thin matchsticks (like shoestring fries). Rinse briefly, then dry extremely well.
Fry until lightly golden and crisp. Drain on paper towels.
3. Cook the onion
Heat the olive oil in a large frying pan. Add the onion and bay leaf and cook gently for 8–10 minutes until soft and golden.
Add the garlic and cook for about 30 seconds.
4. Add the bacalhau
Add the flaked cod and cook for 3–5 minutes, stirring gently.
5. Add the potatoes
Fold the crispy potatoes into the cod and onion mixture.
6. Add the eggs 🥚
Beat the eggs with a little black pepper.
Lower the heat and pour the eggs into the pan. Stir very gently and continuously for about 1–2 minutes.
The eggs should be creamy and just set, not dry like scrambled eggs.
7. Finish
Remove from the heat immediately. Fold in chopped parsley and garnish generously with black olives.
