Authentic Vietnamese Pho relies on a balance of charred aromatics, toasted whole spices, and a long-simmered, clear beef broth

Essential Ingredients
  • Aromatic Spices: Star anise (5-6 pods), cinnamon sticks (1-2 sticks), whole cloves (1 tsp), coriander seeds (1 tbsp), fennel seeds (1 tsp), and black cardamom (1 pod).

  • Broth Base: 3-4 lbs beef marrow bones, 1-2 lbs beef brisket or chuck, 1 large yellow onion, and a 3-inch knob of ginger.

  • Seasoning: Fish sauce, rock sugar (or yellow sugar), salt, and MSG (optional, for authentic depth).

  • Serving: Flat rice noodles (bánh phở), thin raw sirloin slices, green onions, cilantro, Thai basil, bean sprouts, lime wedges, and hoisin/sriracha sauces.

1.Parboil and Clean the Bones:Crucial for a crystal-clear broth.

Place beef bones in a large pot, cover with cold water, and bring to a rolling boil for 10 minutes. Drain completely and rinse bones thoroughly under cold water to wash away all impurities. Clean the pot before returning the bones.

2.Char Aromatics and Toast Spices:

Place onion halves and sliced ginger under a broiler or directly over an open flame until charred and blackened in spots (about 10 minutes). Meanwhile, dry-toast the star anise, cinnamon sticks, cloves, coriander seeds, and fennel seeds in a skillet over medium heat for 3-5 minutes until highly fragrant. Place toasted spices into a spice bag or cheesecloth pouch.

3.Simmer the Broth:Minimum 3 hours; 6-8 hours preferred.

Add the cleaned bones, brisket, charred onion, ginger, spice pouch, rock sugar (1-2 oz), and 1 tbsp salt to the pot. Cover with 6 quarts of cold water. Bring to a gentle simmer, skimming off any scum that rises to the top. Simmer gently uncovered for 3 to 6 hours. Remove brisket after 1.5–2 hours (once tender), cool, and slice thinly.

4.Finish and Season:

Remove bones, onion, ginger, and spice bag. Strain broth through a fine-mesh sieve. Season with fish sauce (about 1/4 cup) and additional salt or rock sugar to balance savory and sweet notes. Keep broth boiling hot.

5.Assemble the Bowls:

Cook rice noodles according to package directions and divide among bowls. Top with cooked brisket slices and raw thinly sliced beef sirloin. Ladle boiling broth directly over raw beef to cook it instantly. Garnish with scallions, cilantro, Thai basil, bean sprouts, and lime.
