A cheap, filling, student-friendly recipe

🛒 Ingredients

  • 2 cups cooked rice (leftover rice is perfect)
  • 2 eggs
  • 1 small onion
  • 1 carrot (or any leftover vegetables)
  • 1–2 cloves garlic
  • 1–2 tablespoons soy sauce
  • 1 tablespoon cooking oil
  • Salt and black pepper
  • Green onion (optional)

Optional: canned tuna, leftover chicken, sausage, or tofu.

👨‍🍳 How to Make It

1. Prepare everything
Chop the onion, garlic, and carrot into small pieces. Beat the eggs in a bowl.

2. Cook the eggs
Heat the oil in a large frying pan. Add the eggs and scramble for about 1 minute. Remove them and set aside.

3. Cook the vegetables
Add the onion, garlic, and carrot to the same pan. Cook for 2–3 minutes.

4. Add the rice
Add the cooked rice and stir-fry over medium-high heat for 3–4 minutes. Break up any large clumps.

5. Season
Add soy sauce and a little black pepper. Stir everything together.

6. Add the eggs
Return the scrambled eggs to the pan and mix well. Cook for another 1–2 minutes.

7. Eat! 🍚

  • Use leftover rice from yesterday.
  • Replace fresh vegetables with frozen vegetables.
