Mochi dough
- 1 cup (160 g) mochiko / glutinous rice flour
- ¼ cup (50 g) sugar
- ¾ cup (180 ml) water
- Potato starch or cornstarch, for dusting
Filling
- 250 g anko (sweet red bean paste)
👨🍳 How to Make It
1. Prepare the filling
Divide the anko into 10–12 small balls. Place them on a plate and refrigerate while you make the mochi.
2. Mix the dough
Combine mochiko and sugar in a microwave-safe bowl. Gradually whisk in the water until completely smooth.
3. Cook the mochi
Cover loosely and microwave for 1 minute. Stir thoroughly.
Microwave for another 1 minute, stir again, then microwave for 30–60 seconds more.
The dough should become thick, sticky, and slightly translucent.
No microwave? Steam the mixture in a heatproof bowl for about 15–20 minutes, stirring once or twice.
4. Prepare your work surface
Generously cover a clean work surface with potato starch or cornstarch.
Carefully transfer the hot dough onto the starch and dust the top as well.
5. Divide the dough
Flatten the dough gently and divide it into 10–12 pieces.
6. Fill the mochi 🍡
Take one piece and flatten it into a small circle. Place an anko ball in the center.
Pull the edges of the mochi up around the filling and pinch firmly to seal.
Turn it over and gently roll it between your hands to create a smooth ball.
7. Serve
Dust lightly with starch and enjoy fresh.

- 🍚 Use mochiko/glutinous rice flour, not ordinary rice flour.
- 💧 Don't add too much water—the dough should be sticky but manageable after dusting.
