- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 can (about 350 g) corned beef (optional, but common in Pacific-style versions)
- 1–2 fresh chilies, finely chopped (optional)
- 1 tablespoon lemon or lime juice
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon cooking oil
👨🍳 How to Make It
1. Prepare the taro leaves
Wash the leaves thoroughly and remove the tough central stem if necessary. Pat them dry.
⚠️ Important: Raw taro leaves contain irritating calcium oxalate crystals. They must be thoroughly cooked; don't eat them raw.
2. Make the filling
Heat the oil in a pan. Sauté the onion for 4–5 minutes, then add garlic and chili.
Add the corned beef if using and cook for another 3–4 minutes.
Pour in about 1½ cups coconut milk. Add salt, pepper, and lemon/lime juice. Simmer for 5 minutes.
3. Make the parcels
Place 2–3 taro leaves on top of each other. Spoon a generous amount of the coconut filling into the center.
Fold the leaves inward to create a sealed parcel.
4. Arrange for cooking
Place the parcels seam-side down in a baking dish. Pour the remaining coconut milk around and partly over them.
Cover the dish tightly with foil.
5. Bake slowly
Bake at 180°C / 350°F for 45–60 minutes, until the leaves are completely tender and the filling is bubbling.
For extra tenderness, cook another 15–20 minutes at a slightly lower temperature.
6. Serve
Carefully open the parcels and serve hot with rice, breadfruit, taro, or other cooked root vegetables.
